Best Vegan Japanese Recipes in 2024

If you’re looking to stay in tonight and make food at home, try these delicious recipes for a full, 3-course vegan Japanese meal:

Appetizer: Miso Soup

For the appetizer, try the classic yet irresistible vegan miso soup.

4 cups vegetable broth
2 tablespoons miso paste (white or red)
1 cup tofu, cubed
1/4 cup chopped green onions
1/4 cup sliced mushrooms (shiitake or button)
1 sheet nori, cut into small pieces
1/2 cup chopped spinach or wakame seaweed (optional)

  1. 1. In a pot, bring the vegetable broth to a gentle simmer. Add the sliced mushrooms and cook for about 5 minutes.
  2. 2. In a small bowl, dissolve the miso paste in a ladleful of hot broth, then stir it back into the pot.
  3. 3. Add the cubed tofu and nori pieces to the soup. Simmer for another 2-3 minutes without bringing it to a boil, as boiling can destroy the beneficial enzymes in miso.
  4. 4. Stir in the chopped green onions and spinach or wakame (if using). Serve hot!

Entree: Vegan Teriyaki Tofu Bowl

For your main dish – a vegan Japanese Teriyaki Tofu Bowl bursting with fresh flavors!

1 block firm tofu, pressed and cubed
1 tablespoon cornstarch
2 tablespoons vegetable oil
1/4 cup soy sauce
2 tablespoons maple syrup
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon grated ginger
1 clove garlic, minced
1 cup cooked rice (white or brown)
Steamed vegetables (broccoli, carrots, snap peas)
Sesame seeds (for garnish)
Chopped green onions (for garnish)

  1. 1. Toss the tofu cubes in cornstarch until evenly coated.
  2. 2. Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until all sides are golden and crispy, about 8-10 minutes. Remove from the skillet and set aside.
  3. 3. In the same skillet, combine soy sauce, maple syrup, rice vinegar, sesame oil, grated ginger, and minced garlic. Bring to a simmer and cook until the sauce thickens slightly, about 3-4 minutes.
  4. 4. Return the tofu to the skillet and toss to coat with the teriyaki sauce.
  5. 5. Serve the teriyaki tofu over a bowl of cooked rice, topped with steamed vegetables.
  6. 6. Garnish with sesame seeds and chopped green onions.

Dessert: Vegan Matcha Coconut Pudding

There’s always room for dessert, right? Especially a classic vegan Japanese dessert – matcha coconut pudding.

1 (13.5 oz) can full-fat coconut milk
3 tablespoons maple syrup (adjust to taste)
1 teaspoon vanilla extract
1 1/2 teaspoons matcha powder
2 tablespoons cornstarch

  1. 1. In a small saucepan, whisk together the coconut milk, maple syrup, and vanilla extract over medium heat until well combined and heated through, but not boiling.
  2. 2. In a small bowl, mix the matcha powder with a splash of water to create a smooth paste.
  3. 3. Whisk the matcha paste into the coconut milk mixture until evenly combined.
  4. 4. In a separate small bowl, mix the cornstarch with a splash of water to create a slurry.
  5. 5. Slowly pour the cornstarch slurry into the coconut milk mixture while whisking continuously.
  6. 6. Continue to cook and whisk for another 2-3 minutes until the pudding thickens to your desired consistency.
  7. 7. Remove from heat and transfer the pudding to serving bowls or glasses.
  8. 8. Let it cool at room temperature for a few minutes, then refrigerate for at least 1-2 hours until set.
  9. 9. Serve chilled and enjoy the creamy, coconutty goodness with a hint of matcha flavor!
