Appetizer: Miso Soup

For the appetizer, try the classic yet irresistible vegan miso soup.

Ingredients:
4 cups vegetable broth
2 tablespoons miso paste (white or red)
1 cup tofu, cubed
1/4 cup chopped green onions
1/4 cup sliced mushrooms (shiitake or button)
1 sheet nori, cut into small pieces
1/2 cup chopped spinach or wakame seaweed (optional)

Instructions:

  1. 1. In a pot, bring the vegetable broth to a gentle simmer. Add the sliced mushrooms and cook for about 5 minutes.
  2. 2. In a small bowl, dissolve the miso paste in a ladleful of hot broth, then stir it back into the pot.
