Appetizer: Miso Soup
For the appetizer, try the classic yet irresistible vegan miso soup.
Ingredients:
4 cups vegetable broth
2 tablespoons miso paste (white or red)
1 cup tofu, cubed
1/4 cup chopped green onions
1/4 cup sliced mushrooms (shiitake or button)
1 sheet nori, cut into small pieces
1/2 cup chopped spinach or wakame seaweed (optional)
Instructions:
- 1. In a pot, bring the vegetable broth to a gentle simmer. Add the sliced mushrooms and cook for about 5 minutes.
- 2. In a small bowl, dissolve the miso paste in a ladleful of hot broth, then stir it back into the pot.
- 3. Add the cubed tofu and nori pieces to the soup. Simmer for another 2-3 minutes without bringing it to a boil, as boiling can destroy the beneficial enzymes in miso.

Ingredients:
1 block firm tofu, pressed and cubed
1 tablespoon cornstarch

1 teaspoon sesame oil

1 clove garlic, minced
1 cup cooked rice (white or brown)

Instructions:

Instructions:
- 1. In a small saucepan, whisk together the coconut milk, maple syrup, and vanilla extract over medium heat until well combined and heated through, but not boiling.
- 2. In a small bowl, mix the matcha powder with a splash of water to create a smooth paste.
- 3. Whisk the matcha paste into the coconut milk mixture until evenly combined.
